+# Pasta

+Serves 3
+
+## Ingredients
+
+- 300g flour
+- 5 eggs
+- salt
+
+## Method
+
+1. Crack egg yolks into weighing vessel, putting aside whites
+2. Add only enough whites to make 200g, discarding rest
+3. Whisk, and combine with flour
+4. Knead for 10 mins
+5. Wrap in cling-film and refrigerate for at least 30 mins
+6. Divide into three portions
+7. Roll each into sheets using pasta machine (optionally, freeze at this point)
+8. Cut into noodles using pasta machine
+9. Add water to pot, salt liberally, and bring to boil
+10. Cook pasta for 1-3 mins until "al dente"
+11. Serve with sauce
